Hearty Kyiv comfort soup: everyone at the table, no one left aside.

A hearty Ukrainian bean soup with potato and smoked bacon, served in one bowl. This soup brings comfort and warmth, just like the visible strength of Ukrainians in the heart of Kyiv. Everyone is welcome at the table, no one is sidelined.

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 2 medium potatoes, diced
  • 150 g smoked bacon, sliced
  • 400 g white beans (canned, rinsed)
  • 1.2 liters chicken or vegetable stock
  • 1 bay leaf
  • 2 tbsp sunflower oil
  • salt and pepper to taste
  • fresh dill, roughly chopped (for garnish)

Method

  1. Heat the sunflower oil in a large pot and fry the bacon until crispy. Remove and set aside.
  2. In the remaining fat, sauté the onion, garlic, carrot, and celery for 5 minutes over low heat.
  3. Add the diced potatoes and cook for another 2 minutes.
  4. Pour in the stock, add the bay leaf, and bring to a boil. Simmer for 10 minutes.
  5. Add the beans and let simmer for another 10 minutes until everything is soft.
  6. Remove the bay leaf. Season with salt and pepper.
  7. Ladle the soup into bowls, top with bacon, and garnish with fresh dill.

Serving notes

  • Serve in one large bowl in the middle of the table so everyone can help themselves.
  • Garnish generously with dill for a Ukrainian touch.
  • Serve with hearty bread, such as rye, for extra comfort.
