A thrilling beef stew with pickled lemon, slow-cooked with sharp chili and tangy gherkin. Flavors move like money through invisible channels, each bite hinting at tension and detours. Mint garnish stands for the elusive cryptocurrency, fresh and untraceable.

Ingredients

  • 800 g beef chuck
  • 2 tbsp sunflower oil
  • 4 large onions, chopped
  • 1 bulb garlic, minced
  • 1 red chili, sliced
  • 1 tbsp tomato paste
  • 500 ml beef stock
  • 2 preserved lemons (or 1 tbsp Moroccan preserved lemon), chopped
  • 4 small gherkins, sliced
  • 2 tsp paprika powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt and pepper to taste
  • Handful fresh mint leaves

Method

  1. Cut the beef into cubes and season with salt and pepper.
  2. Heat the oil in a casserole, brown the meat on all sides.
  3. Add onion, garlic, and chili, cook for 3 minutes.
  4. Stir in tomato paste and cook for 1 minute.
  5. Add paprika, cumin, and coriander, cook briefly.
  6. Pour in the stock, add lemon and gherkin.
  7. Simmer gently for 2.5 hours with the lid ajar.
  8. Garnish with fresh mint before serving.

Serving notes

  • Serve with flatbread to soak up all the sauce.
  • Garnish with extra mint for a cryptic hint.
  • Add a sharp yogurt dip for extra tension.
