Freedom Dome with Sour Stripes

Lemon dome with sour fruit bars: the tension between freedom and imprisonment on your plate.

A sharp-sour dessert with a lemon quark dome, surrounded by long strips of red fruit as bars. The dome refers to detention, the strips symbolize imprisonment and the tension between freedom and restriction.

Ingredients

  • 500 g full-fat quark
  • 100 g sugar
  • 2 lemons (juice and zest)
  • 6 sheets gelatin
  • 150 ml whipping cream
  • 200 g strawberries
  • 100 g raspberries
  • 100 g red currants
  • 2 tbsp powdered sugar
  • 1 tbsp lemon juice
  • 8 ladyfingers

Method

  1. Soak the gelatin in cold water.
  2. Whip the cream until stiff.
  3. Mix quark, sugar, lemon zest and juice.
  4. Heat 2 tbsp lemon juice, dissolve the squeezed gelatin in it.
  5. Mix the gelatin into the quark mixture, fold in the whipped cream.
  6. Line a half-sphere mold (or bowl) with plastic wrap.
  7. Fill with the quark mixture, chill for at least 3 hours until set.
  8. Slice strawberries into long strips.
  9. Blend raspberries and red currants with powdered sugar into a sauce.
  10. Unmold the quark dome onto a platter.
  11. Lay the strawberry strips as vertical bars over the dome.
  12. Break the ladyfingers in half, stand them upright around the dome as a fence.
  13. Drizzle the berry sauce in sharp lines over the bars.

Serving notes

  • Serve extra berry sauce on the side for those who want it even sharper.
  • Garnish with a thin lemon slice as a symbol for the key to freedom.
