Torpedoed Tanker Trifle

Trifle as a capsized oil tanker, with leaking berry sauce and tangy lemon cream for extra tension.
Ingredients
- 1 chocolate cake (400 g, store-bought or homemade)
- 200 ml whipping cream
- 250 g mascarpone
- 2 lemons (zest and juice)
- 80 g sugar
- 200 g red currants
- 50 g raspberries
- 3 tbsp water
- 1 tbsp cornstarch
- 2 tbsp vodka (optional, for extra sharpness)
- 1 tsp vanilla extract
Method
- Cut the chocolate cake into four long pieces, about 10 cm long and 4 cm wide.
- Whip the cream with 40 g sugar and vanilla extract until stiff. Gently fold in the mascarpone.
- Mix lemon zest and juice into the mascarpone cream mixture. Taste: it should be quite tangy and sour.
- Make the berry sauce: bring red currants, raspberries, 40 g sugar, and water to a boil. Simmer gently for 5 minutes.
- Dissolve the cornstarch in a tablespoon of cold water, add to the sauce, and stir until thickened. Let cool. Optionally add vodka for extra kick.
- Place a long piece of cake diagonally on each plate, like a capsized tanker.
- Spoon a generous streak of lemon cream over the center of the cake, as a deck.
- Let the berry sauce run from one side, like leaking oil. Allow some to drip onto the plate.
- Garnish with extra berries around the leak to mimic spreading oil slicks.
Serving notes
- Serve on a rectangular plate for the tanker effect.
- Give each guest a spoon to discover the leaking 'oil' themselves.
- Sprinkle with extra lemon zest for more tension.
