Ingredients

  • 8 large sour pickles (whole)
  • 2 red chili peppers
  • 1 red onion
  • 1 tbsp white wine vinegar
  • 1 tsp sugar
  • 1 tsp coarse sea salt
  • 2 tbsp olive oil
  • Freshly ground black pepper

Method

  1. Slice the red onion into thin half rings. Marinate with vinegar, sugar, and a pinch of salt for 15 minutes.
  2. Cut the chili peppers into long, thin strips (remove seeds for less heat).
  3. Arrange the pickles in a straight row on a large platter, like a border line.
  4. Loosely wrap the chili strips around and between the pickles, to resemble barbed wire.
  5. Scatter the marinated onion over the pickles.

  7. Sprinkle with coarse sea salt.
