Airspace Parfait

Lemon-lime parfait runway with madeleines as jets: tension and tang on your plate.

A layered lemon-lime parfait with sharp berry compote, built as a long runway with diagonally stacked madeleines as ascending fighter jets. The tangy dessert echoes the Polish airspace and the tension of jets scrambling after Russian attacks.

Ingredients

  • 3 lemons
  • 2 limes
  • 150 g caster sugar
  • 400 ml whipping cream
  • 4 eggs
  • 1 vanilla pod
  • 200 g blueberries
  • 100 g raspberries
  • 2 tbsp icing sugar
  • 12 madeleines (store-bought or homemade)
  • 1 tbsp lemon zest
  • 1 tbsp lime juice

Method

  1. Grate the zest of 2 lemons and 1 lime. Juice all lemons and limes.
  2. Separate the eggs. Whisk the yolks with 100 g sugar and vanilla seeds until light and creamy.
  3. Whip the cream until stiff.
  4. Mix the lemon-lime juice and zest into the egg mixture. Gently fold in the whipped cream.
  5. Whisk the egg whites stiff with 50 g sugar. Fold into the lemon cream mixture.
  6. Line a loaf tin with cling film. Pour in the parfait mixture and freeze for at least 4 hours.
  7. Meanwhile, cook the berries and raspberries with icing sugar and 1 tbsp lime juice into a compote. Let cool.
  8. Cut the parfait into long slices, 2 cm thick.
  9. On each plate, place a slice of parfait as a 'runway'. Lay 3 madeleines diagonally on top as if taking off.
  10. Spoon the berry compote alongside for extra tension and color.

Serving notes

  • Sprinkle extra lemon zest over the madeleines for a sharp accent.
  • Serve ice cold so the 'runway' stays firm.
  • Drizzle some lime juice over the compote for extra tang.
