Anak Krakatau Tartare with Ash Rain

A fiery tuna mound with a sesame-nori ash rain, ready to erupt on your plate.

Raw tuna tartare shaped as a volcano mound, surrounded by avocado and radish 'islands'. Black sesame and nori flakes mimic volcanic ash falling across the plate, evoking the eruption and ash cloud over Jakarta.

Ingredients

  • 300 g fresh tuna fillet (sashimi-grade)
  • 2 ripe avocados
  • 8 radishes
  • 2 tbsp black sesame seeds
  • 1 sheet nori
  • 1 lime
  • 1 red chili
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • salt
  • pepper

Method

  1. Cut the tuna into small cubes and mix with soy sauce, rice vinegar, sesame oil, and finely chopped red chili. Season with salt and pepper.
  2. Slice the avocado thinly. Slice the radishes into thin rounds.
  3. Cut the nori sheet into small flakes.
  4. On each plate, shape the tuna tartare into a volcano-like mound in the center.
  5. Arrange a ring of avocado slices and radish rounds around the mound to resemble an island group.
  6. Generously sprinkle black sesame seeds and nori flakes over the tartare and plate to mimic ash rain.
  7. Grate lime zest over the tuna for extra freshness.

Serving notes

  • Serve immediately so the avocado stays fresh.
  • Drizzle extra lime juice over just before serving for extra punch.
