Warm salad bringing comfort after the flames, with roasted vegetables and a hint of smoke.

A comforting, warm salad with roasted vegetables, crispy croutons and a touch of smoked paprika. The ingredients look charred, but bring comfort and hope after the flames. A disaster on the plate, but heartwarming and edible.

Ingredients

  • 1 eggplant
  • 2 red bell peppers
  • 1 courgette
  • 1 red onion
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 100 g stale bread (for croutons)
  • 50 g feta cheese
  • 1 tbsp lemon juice
  • 1 handful flat-leaf parsley
  • salt and pepper

Method

  1. Preheat the oven to 220°C.
  2. Cut eggplant, peppers, courgette and onion into large pieces.
  3. Toss vegetables with 2 tbsp olive oil, paprika, salt and pepper. Spread on a baking tray.
  4. Roast for 25 minutes until slightly charred.
  5. Cut bread into cubes, toss with 1 tbsp olive oil and bake for 10 minutes to make croutons.
  6. Mix warm vegetables with croutons, crumbled feta and lemon juice.
  7. Garnish with parsley and serve warm.

Serving notes

  • Serve on a large platter, symbolizing togetherness after disaster.
  • Sprinkle extra smoked paprika for a subtle smoky aroma.
