Atlantic Bridge Soup

A baguette bridge over creamy soup: celebrating the love between Canada and Europe.

Creamy festive soup with a baguette bridge and cherry tomato pillars, referencing the new connection between Canada and the EU. The bridge sits diagonally over the bowl, visible and inviting, perfect for sharing and celebrating.

Ingredients

  • 2 onions
  • 2 cloves garlic
  • 1 leek
  • 1 large carrot
  • 1 liter vegetable stock
  • 200 ml heavy cream
  • 100 g frozen peas
  • 100 g smoked salmon
  • 1 baguette
  • 8 cherry tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill
  • salt and pepper to taste

Method

  1. Roughly chop onion, garlic, leek, and carrot.
  2. Sauté onion and garlic in olive oil in a soup pot until translucent.
  3. Add leek and carrot, cook for 3 more minutes.
  4. Add stock, bring to a boil, and simmer for 15 minutes.
  5. Add peas and cook for 3 minutes.
  6. Blend the soup smooth with a hand blender.
  7. Stir in the cream, season with salt and pepper.
  8. Slice the baguette lengthwise, toast lightly in the oven.
  9. Halve the cherry tomatoes.
  10. Slice the smoked salmon into wide strips.
  11. Pour the soup into wide bowls.
  12. Place a baguette half diagonally across each bowl as a bridge.
  13. Place cherry tomato halves at both ends of the baguette as pillars.
  14. Drape salmon strips over the bridge like ribbons.
  15. Garnish with fresh dill.

Serving notes

  • Serve the soup with the bridge intact for effect.
  • Let guests break and dip the bridge themselves.
  • Sprinkle extra dill on top for color if desired.
