A comforting salad with the plate as a starting point: back to square one.

A warm meal salad with potato slices and green beans arranged as a 'starting point': a large circle with an arrow looping back. The layout symbolizes confusion and having to start over, just like after a wrong diagnosis.

Ingredients

  • 800 g waxy potatoes
  • 400 g green beans
  • 1 red onion
  • 4 eggs
  • 150 g cherry tomatoes
  • 100 g lamb's lettuce
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp wholegrain mustard
  • 1 tsp honey
  • salt and pepper

Method

  1. Peel the potatoes and cut into thick 1 cm slices. Boil for 10 minutes until just tender, then let cool slightly.
  2. Trim the green beans and boil for 6 minutes until just tender. Rinse under cold water.
  3. Boil the eggs for 7 minutes so the yolks are still slightly soft. Peel and halve.
  4. Slice the red onion into thin half rings. Halve the cherry tomatoes.
  5. Make a dressing from olive oil, white wine vinegar, mustard, honey, salt and pepper.
  6. Mix the potato slices, green beans, onion, and tomatoes with half the dressing.
  7. Lay the lamb's lettuce as a base on a large platter. In the center, form a circle of potato slices (the 'starting point').
  8. Arrange the green beans as an arrow pointing back to the circle, slightly curved. Use halved eggs as the arrowhead.
  9. Drizzle the remaining dressing over the salad.

Serving notes

  • Serve warm for the most comforting effect.
  • Place the platter in the center of the table so everyone can start from the 'beginning'.
