Baked Brick

Crispy filo ‘laptop’ with lemon cream and chili, a dessert full of tension and control.

Ingredients

  • 8 sheets filo pastry
  • 80 g unsalted butter, melted
  • 2 lemons (zest and juice)
  • 100 g fine caster sugar
  • 2 eggs
  • 1 egg yolk
  • 100 ml whipping cream
  • 1 red chili pepper
  • 1 tbsp powdered sugar
  • 1 tbsp pistachios, roughly chopped

Method

  1. Preheat the oven to 180°C.
  2. Cut the filo sheets into rectangles about 12x8 cm.
  3. Brush each sheet lightly with melted butter and layer them in pairs on a baking tray with parchment. Make 8 double rectangles.
  4. Bake the filo rectangles for 8-10 minutes until golden and crisp. Let cool.
  5. Zest the lemons and squeeze the juice.
  6. Whisk eggs, yolk, and sugar until light in a saucepan.
  7. Add lemon zest and juice. Heat while stirring until the mixture thickens.
  8. Remove from heat and stir in the cream. Let cool.
  9. Slice the chili into thin rings.
  10. On each plate, build a ‘laptop’: stand two filo rectangles at a right angle (one as ‘screen’, one as ‘keyboard’), fix with lemon cream.
  11. Fill the ‘keyboard’ with a generous spoon of lemon cream, sprinkle with chili rings, powdered sugar, and pistachios.

Serving notes

  • Serve with extra lemon zest for added sharpness.
  • Set the filo ‘laptop’ slightly open for a recognizable silhouette.
  • Place an extra chili ring as a ‘power button’ on the keyboard.
