Barolo Van Salad

Two bread-vans loaded with grapes as stolen Barolo: neat outside, daring inside.

A bold Italian salad with red wine dressing, built as two delivery vans in profile. Ciabatta slices form the bodies, red grapes the 'wine bottles' inside. Neat on the outside, a daring cargo within. The plating directly echoes the infamous wine heist.

Ingredients

  • 1 ciabatta loaf
  • 100 g red grapes
  • 1 red bell pepper
  • 100 g arugula
  • 100 g soft goat cheese
  • 2 tbsp walnuts
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2 tbsp Barolo (or other robust red wine)
  • 1 tsp honey
  • salt and pepper

Method

  1. Slice the ciabatta into 8 thick pieces and toast them under the grill until golden.
  2. Cut the red bell pepper into wide strips.
  3. Wash and halve the grapes.
  4. Mix a dressing from olive oil, red wine vinegar, Barolo, honey, salt, and pepper.
  5. On each plate, arrange two ciabatta slices side by side, slightly staggered, as vans in profile.
  6. Fill each 'van' with a mix of grapes and walnuts as stolen bottles.
  7. Place a strip of bell pepper as a 'windshield' and a tuft of arugula as cargo spilling out.
  8. Crumble goat cheese over the salad.
  9. Drizzle everything with the dressing.

Serving notes

  • Serve with a glass of robust red wine.
  • Arrange the vans diagonally on the plate for a dynamic effect.
  • Let some grapes roll out of the 'van' as lost bottles.
