Barricade Soup

Spicy French onion soup with a line of baguette slices as a barricade across the bowl, referencing closed schools during the protests. The slices form a visible barrier, just like demonstrators blocking access. Sharp, warming, with a sour twist.

Ingredients

  • 6 large onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 40 g unsalted butter
  • 1.5 liters beef stock
  • 125 ml dry white wine
  • 1 baguette
  • 100 g grated Gruyère
  • 2 tbsp white wine vinegar
  • 1 tsp black pepper
  • 1/2 tsp cayenne pepper
  • salt to taste

Method

  1. Slice the onions into thin half rings and finely chop the garlic.
  2. Heat olive oil and butter in a large pot. Cook the onions with some salt on low heat for 30 minutes until deeply golden. Stir regularly.
  3. Add garlic, black pepper, and cayenne. Cook for 2 more minutes.
  4. Deglaze with white wine and vinegar. Let simmer for 2 minutes.
  5. Add the stock. Simmer gently for 20 minutes.
  6. Cut the baguette into thick diagonal slices. Toast under the grill until crisp.
  7. Divide the soup among bowls. Lay the baguette slices in a clear row across the soup, like a barricade. Sprinkle with Gruyère.
  8. Place the bowls briefly under the grill until the cheese melts and browns.

Serving notes

  • Serve with extra cayenne for more tension.
  • Keep the baguette barricade clearly visible on the soup.
