A barricade dessert: sharp lemon cream and crisp cookies, stacked as protective boards against the protest.

Layers of sharp lemon cream and crispy cookies, stacked like a barricade in front of a shop window: a dessert full of tension, tang, and crunch. The plating represents the wooden boards protecting shops during the Bastille protest.

Ingredients

  • 4 lemons (organic)
  • 150 g sugar
  • 4 eggs
  • 100 g butter
  • 200 ml whipping cream
  • 8 kletskoppen (or other thin crisp cookies)
  • 1 tbsp powdered sugar
  • 1 tsp lemon zest (extra, for garnish)

Method

  1. Grate the zest of 3 lemons and juice all lemons.
  2. Whisk the eggs with the sugar in a heatproof bowl until light.
  3. Add lemon juice and zest to the egg mixture.
  4. Set the bowl over a bain-marie and stir until thickened (about 10 minutes).
  5. Add the butter in cubes and stir until dissolved. Let cool.
  6. Whip the cream with powdered sugar until stiff and fold into the cooled lemon cream.
  7. Carefully break the cookies into rectangular pieces about 5x10 cm.
  8. Spoon some lemon cream onto each plate. Stand a piece of cookie upright in it, alternating layers of cream and cookie to build a small barricade of 3-4 layers.
  9. Garnish with extra lemon zest over the barricade.

Serving notes

  • Serve on a rectangular plate for the shop window effect.
  • Sprinkle extra powdered sugar as 'dust clouds' around the barricade.
