Betel Nut Parfait with Tooth Grooves

A sharp, fresh parfait dessert with lime and cardamom, shaped as a row of round 'nuts' with deep raspberry coulis grooves, echoing the betel nut and worn teeth from the news. The sour-sweet contrast pulls your mouth tight, just like the topic.

Ingredients

  • 400 ml whipping cream
  • 4 egg yolks
  • 100 g fine sugar
  • 2 limes (juice and zest)
  • 6 cardamom pods
  • 200 g raspberries (fresh or frozen)
  • 50 g powdered sugar
  • 8 small meringues (store-bought)
  • 1 tbsp cornstarch
  • 1 tbsp water

Method

  1. Crush the cardamom pods and heat with the cream until just below boiling. Infuse for 10 minutes, then strain out the pods.
  2. Whisk the egg yolks with the sugar until foamy.
  3. Pour the warm cream over the yolks, whisking, and heat au bain-marie until the mixture thickens.
  4. Stir in lime juice and zest, let cool.
  5. Churn the mixture in an ice cream maker or freeze, stirring every 30 minutes until airy.
  6. Meanwhile, make the raspberry coulis: puree raspberries with powdered sugar, strain out seeds.
  7. Heat the coulis with cornstarch mixed with water until slightly thickened, let cool.
  8. Scoop 8 round parfait balls (2 per person) and arrange in a row on each plate.
  9. Use the back of a spoon to make deep grooves in each ball, carefully pour raspberry coulis into the grooves.
  10. Break the meringues in half and place at one end of the row as 'tooth roots'.

Serving notes

  • Serve immediately to keep the parfait firm.
  • Drizzle extra lime juice over the grooves for more sharpness.
  • Garnish with extra lime zest for extra tension.
