Birthright Terrine with Passport Rounds

A stately beet and goat cheese terrine, built like an American passport: a rectangular slice with round 'stamps' of egg and tomato. The shape refers to the passport as a symbol of birthright, central to the news.

Ingredients

  • 2 large cooked and peeled red beets
  • 200 g soft goat cheese
  • 4 medium eggs
  • 2 large ripe tomatoes
  • 2 tbsp fresh chives, finely chopped
  • 2 tbsp crème fraîche
  • salt and pepper to taste
  • 4 slices dark rye bread

Method

  1. Line a small loaf tin with plastic wrap.
  2. Cut the beets into thin rectangular slices.
  3. Mix goat cheese with crème fraîche, chives, salt, and pepper until smooth.
  4. Hard-boil the eggs, peel and cut into thick slices.
  5. Cut the tomatoes into thick slices.
  6. Layer beet slices in the tin, spread with goat cheese, repeat until all is used.
  7. Press 4 round slices of egg and 4 of tomato into the top layer of beet, like 'passport stamps'.
  8. Cover, chill for at least 1 hour.
  9. Unmold the terrine and cut into 4 rectangular slices.
  10. Serve each slice on a piece of rye bread.

Serving notes

  • Place the terrine squarely in the center of the plate, with the stamps clearly visible.
  • Serve without extra garnish for a formal look.
