Blocking Roadblock

Chicken drumsticks and tangy veggies make an edible roadblock, packed with tension and spice.

Spicy chicken drumsticks and tangy grilled vegetables, lined up as a roadblock like at the airbase. The plate shows the barricade: a row of drumsticks, halved pointed peppers, and pickles across the plate. The tension is in the sharp marinade and the contrasting sourness.

Ingredients

  • 8 chicken drumsticks (about 1 kg)
  • 2 red pointed peppers
  • 4 medium pickles
  • 2 red onions
  • 2 cloves garlic
  • 2 tbsp harissa
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp smoked paprika powder
  • salt and pepper to taste

Method

  1. Mix harissa, honey, lemon juice, olive oil, cumin, paprika, salt and pepper into a marinade.
  2. Rub the chicken drumsticks with the marinade and marinate for at least 30 minutes.
  3. Preheat the oven to 200°C.
  4. Slice the pointed peppers lengthwise and remove seeds.
  5. Cut the pickles in half lengthwise.
  6. Peel the onions and cut into wedges.
  7. Place the chicken, peppers, pickles, and onions in a straight row across a baking tray.
  8. Roast for 35-40 minutes until the chicken is golden and cooked and the vegetables are soft.
  9. Arrange on a long platter: build a straight roadblock of chicken, pepper, pickle, and onion, alternating, across the plate.

Serving notes

  • Serve with extra lemon wedges for more zing.
  • Place the platter crosswise on the table so the ‘roadblock’ is clear.
