Border Salad Lake America-Ontario

A salad with a clear border, two flavors, and a sharp edge: Lake Ontario on your plate.

A fresh, tangy-sharp salad with a striking split: blue grapes and feta (Canada) on one side, tomato and bacon (US) on the other, separated by a long cucumber forming the Lake Ontario border. The lake's silhouette is clearly visible in the plating.

Ingredients

  • 1 cucumber (long, straight)
  • 200 g blue grapes
  • 100 g feta cheese
  • 200 g cherry tomatoes
  • 100 g crispy bacon
  • 75 g arugula
  • 1 red onion
  • 2 tbsp capers
  • 3 tbsp white wine vinegar
  • 5 tbsp olive oil
  • 1 tsp Dijon mustard
  • pepper and salt

Method

  1. Wash the cucumber and cut it lengthwise. Place both halves in the center of a large platter, slightly angled together to form the wavy border of Lake Ontario.
  2. Wash and halve the blue grapes. Place them on one side of the cucumber, along with diced feta and half the arugula.
  3. Halve the cherry tomatoes. Place these on the other side of the cucumber, with crispy bacon pieces and the rest of the arugula.
  4. Slice the red onion into thin rings and scatter over both sides.
  5. Sprinkle the capers over the salad.
  6. Whisk together white wine vinegar, olive oil, Dijon mustard, pepper, and salt. Drizzle over the salad.
  7. Serve immediately so the border remains clear.

Serving notes

  • Serve on a long platter for the best border effect.
  • Keep the cucumber unbroken as the 'border'.
  • Arrange ingredients tightly against the cucumber for a strong contrast.
