Break-In Rolls with Entry Point

Server rolls: neat outside, hacked and spicy inside.

Stuffed zucchini rolls on a square toast base, presented as a computer server with a skewer ‘breaking in’. Neat outside, spicy inside: just like the hacking scandal.

Ingredients

  • 2 large zucchinis
  • 150 g cream cheese
  • 1 red chili pepper
  • 1 clove garlic
  • 8 slices white sandwich bread
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • salt and pepper
  • 4 sturdy wooden skewers

Method

  1. Slice the zucchinis lengthwise into thin strips using a cheese slicer.
  2. Grill the strips briefly on both sides in a grill pan until marked.
  3. Finely chop chili and garlic, mix with cream cheese, lemon zest, salt, and pepper.
  4. Spread the cheese mixture on each zucchini strip and roll up tightly.
  5. Remove crusts from the bread, toast until golden, and cut each slice into a square.
  6. Place two zucchini rolls upright on each bread square, like mini servers.
  7. Pierce one roll per plate diagonally with a skewer, as the ‘hack’ entry point.

Serving notes

  • Serve on a white plate for the server effect.
  • Drizzle olive oil around for shine.
  • Serve immediately to keep the contrast between warm toast and cool filling.
