A bridge of beans and carrots, sharply marinated, symbolizes a tense encounter between two superpowers.

Two rows of crisp, sharply marinated green beans and carrot sticks face each other like a bridge, with a spicy, tangy dip in the middle: an edible meeting between the US and China, full of tension and contrast.

Ingredients

  • 300 g green beans
  • 3 large carrots
  • 1 red chili pepper
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 lime (juice and zest)
  • 1 garlic clove
  • 1 tsp sesame oil
  • salt
  • freshly ground black pepper
  • 2 tbsp toasted sesame seeds

Method

  1. Trim the green beans. Blanch for 4 minutes in boiling water, then rinse with cold water.
  2. Peel the carrots and cut into long thin strips (julienne). Blanch for 1 minute, rinse cold.
  3. Mix rice vinegar, soy sauce, honey, lime juice and zest, finely chopped chili and garlic, sesame oil, salt, and pepper in a bowl.
  4. Place green beans and carrot strips in separate bowls, divide the marinade, and let sit for 20 minutes.
  5. On each plate, arrange two rows of green beans angled towards each other, like bridge pillars. Lay carrot strips across as the bridge span.
  6. Spoon some of the sharp marinade in the center as a symbolic gap.
  7. Sprinkle with sesame seeds.

Serving notes

  • Serve with extra lime wedges for those who want more sharpness.
  • Keep the bridge shape intact on the plate so the silhouette is clearly visible.
