Budget Gap with Three Dollar Dots

A sober panna cotta in a large, empty dish, with three small coin-shaped cookies scattered on top. The dessert shows the deficit: lots of emptiness, little sweetness, and three visible 'payments' as a nod to the US payments to the UN.

Ingredients

  • 500 ml semi-skimmed milk
  • 250 ml heavy cream
  • 60 g sugar
  • 2 sheets gelatin
  • 1 tsp vanilla extract
  • 6 small round butter cookies (e.g. mini Maria biscuits)
  • 1 tbsp powdered sugar

Method

  1. Soak the gelatin sheets in cold water for 5 minutes.
  2. Heat the milk, cream, sugar, and vanilla in a saucepan until almost boiling.
  3. Remove from heat, squeeze out the gelatin, and dissolve it in the warm mixture.
  4. Let cool to room temperature.
  5. Pour the mixture into a large, shallow dish (e.g. a 30 cm baking dish) so it forms a thin layer.
  6. Let set in the fridge for at least 4 hours.
  7. Dust the cookies with powdered sugar.
  8. Take the dish out of the fridge and place three cookies spaced apart on the surface as 'dollar dots'.
  9. Serve directly from the dish, so the emptiness remains visible.

Serving notes

  • Serve in a large, light-colored dish for maximum effect.
  • Place the cookies just before serving so they stay crisp.
  • Cut the panna cotta at the table so the arrangement remains visible.
