Long, sharp soup with 'passengers' as a nod to the buses full of recruits.

A sharp, sour-spicy Ukrainian chicken soup, served in a long dish like a bus. Hard-boiled egg and pickled cucumber slices float as 'passengers'. Bright green dill represents the survival spirit. The dish visualizes the Odesa departure and the tension of the recruitment weekend.

Ingredients

  • 800 g boneless chicken thighs
  • 2 onions
  • 3 cloves garlic
  • 2 large carrots
  • 2 celery stalks
  • 1.5 l chicken stock
  • 2 bay leaves
  • 2 tbsp sunflower oil
  • 2 tbsp white wine vinegar
  • 2 medium pickles
  • 4 eggs
  • 1 lemon
  • 1 tsp black peppercorns
  • 1 tbsp sugar
  • 2 tbsp fresh dill, roughly chopped
  • salt to taste

Method

  1. Cut the chicken thighs into large pieces. Heat the oil in a large pot and brown the chicken all over.
  2. Chop the onions and garlic. Add to the chicken and sauté for 3 minutes.
  3. Slice the carrots and celery into half-moons. Add to the pot and cook for 5 minutes.
  4. Add the chicken stock, bay leaves, peppercorns, and sugar. Bring to a boil, reduce heat, and simmer for 30 minutes.
  5. Meanwhile, hard-boil the eggs, peel, and slice them thickly.
  6. Slice the pickles diagonally.
  7. After 30 minutes, add the white wine vinegar, juice of half a lemon, and salt to taste. Simmer 5 more minutes.
  8. Remove the bay leaves. Ladle the soup into a long rectangular dish.
  9. Arrange the egg and pickle slices as 'passengers' in the 'bus'. Generously sprinkle dill down the center as 'survival spirit'.
  10. Serve immediately, with extra lemon if desired.
