Ingredients

  • 600 g green asparagus
  • 2 lemons
  • 1 red chili pepper
  • 4 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • salt and pepper
  • 1 tsp coarse sea salt

Method

  1. Preheat the oven to 220°C.
  2. Wash the asparagus, trim off the woody ends.
  3. Mix 2 tbsp olive oil with salt and pepper, brush the asparagus with it.
  4. Grill the asparagus for 10 minutes in the oven until cooked and lightly browned.
  5. Zest 1 lemon and juice both lemons.
  6. Slice the chili pepper into thin rings (remove seeds for less heat).
  7. Whisk a vinaigrette from lemon juice, zest, mustard, vinegar, honey, 2 tbsp olive oil, chili, and a pinch of salt.
  8. Arrange the asparagus tightly in four lines on a large platter, like runways.
  9. Drizzle the vinaigrette diagonally across the lines, as 'closed' markings.
  10. Sprinkle with coarse sea salt.

Serving notes

  • Serve on a rectangular platter for the runway effect.
  • Offer extra lemon wedges for added tension.
  • Place the platter crosswise on the table so the runways are clear.
