Capitol Towers

Vegetable columns as the Capitol, a side dish that literally puts Congress on your table.

Neat stacks of grilled eggplant, zucchini, and tomato form four columns on the plate, echoing the Capitol building. The solemn arrangement nods to Senator McConnell’s return to Congress, visually strong yet fragile. Sober but flavorful.

Ingredients

  • 2 eggplants
  • 2 zucchinis
  • 4 large tomatoes
  • 3 tablespoons olive oil
  • 1 clove garlic
  • salt and pepper to taste
  • 8 basil leaves
  • 100 g feta cheese

Method

  1. Cut the eggplants and zucchinis into thick slices about 1 cm each.
  2. Slice the tomatoes into equally thick rounds.
  3. Brush all slices with olive oil and rub with a pressed clove of garlic.
  4. Grill the eggplant, zucchini, and tomato slices in a grill pan until soft and lightly colored.
  5. Season with salt and pepper.
  6. Stack four towers on each plate: start with an eggplant slice, then zucchini, then tomato, repeat for three layers.
  7. Crumble feta over the towers and garnish each with a basil leaf.
  8. Arrange the four towers in a straight, solemn row, like Capitol columns.

Serving notes

  • Serve on a rectangular plate for extra 'Congress effect.'
  • Drizzle with a little extra olive oil just before serving.
