Caravan Tray Bake

Rows of potato slices as destroyed caravans on a warm ratatouille.

A warm oven dish with grilled potato slices as caravans, standing in rows on comforting ratatouille. The potatoes are upright, mimicking destroyed caravans after the fire at the campsite. A side dish that literally puts the news image on the table.

Ingredients

  • 600 g waxy potatoes
  • 2 courgettes
  • 1 eggplant
  • 2 red bell peppers
  • 1 large onion
  • 2 cloves garlic
  • 400 g chopped tomatoes (can)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and cut into 1 cm thick slices.
  3. Parboil the potato slices for 5 minutes in salted water, drain and let steam dry.
  4. Cut courgette, eggplant, pepper, onion and garlic into cubes.
  5. Heat 1 tbsp olive oil in a large frying pan and fry onion and garlic for 2 minutes.
  6. Add courgette, eggplant and pepper, fry for 5 minutes.
  7. Add chopped tomatoes, thyme, oregano, salt and pepper. Simmer gently for 10 minutes.
  8. Spoon the ratatouille into an oven dish and smooth out.
  9. Stand the potato slices upright in rows in the ratatouille, like caravans after a fire.
  10. Brush the potato slices with 1 tbsp olive oil and sprinkle lightly with salt.
  11. Bake for 25 minutes in the center of the oven until the potatoes are golden brown.

Serving notes

  • Serve warm, place the dish in the center of the table.
  • For extra comfort: sprinkle grated cheese over the potato slices before baking.
