Carbon Credit Dome

Ingredients

  • 4 eggs
  • 150 g fine caster sugar
  • 400 ml heavy cream
  • 2 limes (zest and juice)
  • 100 g white chocolate
  • 150 g dark chocolate
  • 75 g biscuits (digestive)
  • 30 g butter
  • 1 tbsp pistachios, finely chopped
  • 1 handful fresh mint

Method

  1. Line a half-sphere bowl (about 1 liter) with plastic wrap.
  2. Beat the eggs with 100 g sugar until light and fluffy.
  3. Whip the cream stiff in another bowl.
  4. Fold the whipped cream into the egg mixture.
  5. Add lime juice and zest to the mixture.
  6. Melt the white chocolate over a bain-marie and mix into the semifreddo mixture.
  7. Pour the mixture into the bowl and freeze for at least 4 hours.
  8. Crumble the biscuits and mix with melted butter, pistachios, and mint for green crumbs.
  9. Melt the dark chocolate and pour over a half-sphere (e.g., metal bowl) to form a thin dome. Let harden.
  10. Turn the semifreddo out onto a plate, cover the base with green crumbs to resemble grass.
  11. Place the chocolate dome over the semifreddo to mimic an enclosed nature reserve.
  12. Serve immediately, break the dome at the table for the scandal effect.

Serving notes

  • Sprinkle extra lime zest over the dome for a fresh accent.
  • Serve with a mint sprig for a green hint to the grassland.
