Sober dessert: a carriage of cake and peach, with a chocolate horse that comes to an abrupt halt.

A sober dessert: a rectangular slice of cake as a carriage, with peach halves as wheels, pulled by a modest strip of dark chocolate as the 'horse'. The silhouette of the horse-drawn carriage is clear. Fits the news: a brake on tradition, without frills.

Ingredients

  • 1 rectangular cake (350 g, e.g. vanilla or gingerbread)
  • 2 canned peaches (drained)
  • 40 g dark chocolate
  • 2 tbsp apricot jam
  • 1 tsp lemon juice

Method

  1. Cut the cake into 4 rectangular slices about 2 cm thick.
  2. Cut each peach half into 2 equal pieces.
  3. Melt the dark chocolate au bain-marie or in the microwave.
  4. Place a slice of cake horizontally on each plate as the 'carriage'.
  5. Set a peach half on each side of the cake (at the base) as 'wheels', 2 per slice.
  6. Drizzle some apricot jam mixed with lemon juice over the cake for shine.
  7. Draw a thin line of melted chocolate in front of the cake as the 'horse', optionally with a loop as a rein.
  8. Let the chocolate set before serving.

Serving notes

  • Serve on a white plate for contrast.
  • Let the chocolate horse line run slightly at an angle, as if the carriage just stopped.
  • Do not add extra decoration, keep it sober.
