Ceuta Dish – Borderless Comfort Stew

One dish full of comfort, warmth and hope, for everyone at the table.

A warm, nourishing stew with Spanish chorizo, Moroccan chickpeas and plenty of vegetables. One dish, comforting and simple, as an ode to the hopeful journey to Ceuta. For everyone at the table, no matter where you're from.

Ingredients

  • 200 g chorizo, sliced
  • 1 can chickpeas (400 g), drained
  • 2 red bell peppers, sliced
  • 1 zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 400 g canned diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 2 tbsp olive oil
  • 400 ml vegetable stock
  • Salt and pepper to taste
  • Handful fresh parsley, roughly chopped

Method

  1. Heat the olive oil in a large casserole or stew pan and fry the chorizo for 2 minutes.
  2. Add onion and garlic, cook for 3 minutes until translucent.
  3. Add bell pepper, zucchini, paprika, and cumin, fry for 5 minutes.
  4. Add tomatoes, chickpeas, and stock. Bring to a boil.
  5. Let the stew simmer uncovered for 20 minutes.
  6. Season with salt and pepper.
  7. Sprinkle with parsley and serve everything in one dish.

Serving notes

  • Serve with a piece of bread as a symbolic 'border'.
  • Let everyone scoop from the dish themselves, for a sense of gathering.
  • Garnish with a Spanish and Moroccan flag made of pepper and parsley.
