Chancellor's Steps Salad with Sharp Dressing

A salad of crisp vegetables and mustard dressing, arranged in a visible staircase of endive and cucumber. The 'steps' echo the chancellor's precarious position: whoever climbs can also fall. Flavors are sharp and tangy, fitting the political tension.

Ingredients

  • 3 heads Belgian endive
  • 1 cucumber
  • 2 red onions
  • 200 g cherry tomatoes
  • 1 red bell pepper
  • 150 g feta cheese
  • 4 tbsp coarse mustard
  • 2 tbsp white wine vinegar
  • 6 tbsp olive oil
  • 1 tbsp honey
  • salt and pepper
  • fresh chives (chopped)

Method

  1. Cut the base off the endive and separate the leaves.
  2. Slice the cucumber into long, diagonal slices.
  3. Slice the red onion into thin rings.
  4. Halve the cherry tomatoes.
  5. Slice the bell pepper into thin strips.
  6. Make the dressing: mix mustard, white wine vinegar, olive oil, honey, salt, and pepper into a sharp vinaigrette.
  7. On a large platter, arrange the endive leaves in three overlapping, stepped rows, from wide to narrow.
  8. Lay the cucumber slices diagonally and in steps on top, emphasizing the staircase shape.
  9. Scatter onion, bell pepper, and tomatoes around and over the steps.
  10. Crumble the feta over the salad.
  11. Drizzle the dressing generously over the steps.
  12. Garnish with chives.

Serving notes

  • Serve on a long platter so the staircase shape stands out.
  • Offer extra dressing on the side for more sharpness.
