Channel Shark Salad

Shark of salmon and cucumber swims through a leek-net: a festive ode to Bukangi.

A festive salad shaped like a shark swimming through a channel, built from salmon, cucumber and nori, with a 'net' of thin leek rings. The shark refers to Bukangi in Busan, the net to the rescue attempt. A fresh, generous salad to share.

Ingredients

  • 200 g smoked salmon in slices
  • 1 large cucumber
  • 1 avocado
  • 2 sheets nori
  • 1 small leek
  • 100 g young lettuce leaves
  • 1 lime
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame seeds
  • Salt and pepper

Method

  1. Wash the cucumber and slice lengthwise into thin strips with a cheese slicer.
  2. Slice the avocado thinly.
  3. Cut the leek into very thin rings.
  4. Cover a large flat platter with the lettuce leaves as water.
  5. Lay the cucumber strips zigzagging as a long, wavy body across the center: this is the shark's silhouette.
  6. Shape the dorsal and tail fin of the shark with pieces of salmon on top of the cucumber.
  7. Cut or tear the nori sheets to give the shark a clear back line and tail.
  8. Make an eye from a piece of nori and a sesame seed.
  9. Arrange thin leek rings as a long 'net' on one side of the shark, as if stretched over the channel.
  10. Mix lime juice, sesame oil, soy sauce, salt and pepper into a dressing.
  11. Drizzle the dressing over the salad and sprinkle the rest of the sesame seeds on top.

Serving notes

  • Serve on a large platter so everyone can share.
  • Offer extra dressing on the side.
  • Place the dish in the center of the table: enjoy the shark in the channel together.
