Cibeles Crostini Blockade

Ingredients

  • 1 baguette
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 red bell pepper
  • 12 green olives, pitted
  • 4 tbsp tomato sauce (simple, homemade or jarred)
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Slice the baguette into 16 thin diagonal pieces.
  3. Brush slices with olive oil and rub with half the garlic clove.
  4. Bake crostini 6-8 minutes until golden brown.
  5. Slice the pepper into thin strips about 5 cm long.
  6. On each plate, lay 4 crostini in a straight line, leaving a small gap in the center.
  7. Spoon some tomato sauce behind the crostini line as a plaza.
  8. In the gap, place 3 olives and 2 pepper strips, half crossing the crostini, as 'demonstrators' breaking through.
  9. Sprinkle with salt and pepper.

Serving notes

  • Serve on a rectangular plate for the plaza effect.
  • Drizzle extra olive oil over the crostini for shine.
