Closed Door Parfait

A pristine white parfait with an impenetrable dark door, a quiet nod to closed press doors.

A neat, rectangular white chocolate parfait with a narrow, dark 'door' of pure chocolate sauce in the center. The dessert represents the hermetically sealed entrance of the White House: pristine on the outside, with a sharp, bitter core.

Ingredients

  • 200 ml whipping cream
  • 100 g white chocolate
  • 50 g sugar
  • 2 eggs
  • 1 sachet vanilla sugar
  • 2 tbsp pure chocolate sauce
  • 1 tbsp cocoa powder
  • 4 thin strips of dark chocolate (for the 'door')

Method

  1. Line a small loaf tin (about 20x10 cm) with cling film.
  2. Melt the white chocolate in a bain-marie and let it cool slightly.
  3. Whisk the eggs with sugar and vanilla sugar until foamy.
  4. Whip the cream until stiff.
  5. Fold the melted white chocolate into the egg mixture, then gently fold in the whipped cream.
  6. Pour the mixture into the tin, smooth the top, and freeze for at least 4 hours.
  7. Turn out the parfait onto a board, cut into 4 neat rectangles.
  8. Place each rectangle on a plate. Draw a narrow, vertical line of pure chocolate sauce in the center of each piece: the 'door'.
  9. Stand a thin strip of dark chocolate upright in the sauce as a door marker.
  10. Lightly dust the plates with cocoa powder for a shadow effect.

Serving notes

  • Serve ice-cold for maximum sharpness.
  • Let guests break open the 'door' themselves with their spoon.
