Coca Dam Crostini

Neatly stacked crostini with a bold tapenade crack: Coca River corruption served up on your plate.

Crispy crostini form the dam wall of the hydroelectric plant, with a neat ricotta façade. A hidden streak of spicy tapenade runs diagonally as the infamous crack: scandal beneath the surface, neat on the outside.

Ingredients

  • 1 baguette
  • 200 g ricotta
  • 80 g black olive tapenade
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 tbsp fresh parsley, finely chopped
  • Salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Slice the baguette diagonally into pieces about 1.5 cm thick.
  3. Rub the slices with a cut clove of garlic and brush with olive oil.
  4. Bake the crostini for 8 minutes until golden and crisp.
  5. Let cool, then spread a generous layer of ricotta on each crostini.
  6. Arrange the crostini tightly next to each other on a long platter, like a dam wall.
  7. With a spoon, draw a diagonal streak of tapenade across the ricotta, mimicking a crack.
  8. Garnish with chopped parsley, salt, and pepper.

Serving notes

  • Serve on a long platter for the hydro dam effect.
  • Make sure the tapenade crack runs diagonally across the crostini.
  • Present with small forks for that ‘neat outside, sting inside’ vibe.
