A sharp soup with a cockroach column of halved eggs and olive across the surface.

A spicy-sour Indian lentil soup, served with a row of halved eggs and black olive slices as cockroaches marching across the surface. The Cockroach Movement's march is literally visible on the plate.

Ingredients

  • 250 g red lentils
  • 2 onions
  • 3 cloves garlic
  • 1 red chili
  • 1 tbsp grated ginger
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1.2 l vegetable stock
  • 2 tbsp tomato paste
  • 1 lime
  • 4 eggs
  • 16 pitted black olives
  • 2 tbsp sunflower oil
  • Salt and pepper to taste
  • Fresh coriander, optional

Method

  1. Boil the eggs for 8 minutes until hard, cool in cold water, and peel.
  2. Finely chop the onions, garlic, chili, and ginger.
  3. Heat oil in a soup pot, sauté onion, garlic, chili, ginger, cumin and mustard seeds until fragrant.
  4. Add turmeric and garam masala, fry briefly.
  5. Add lentils, tomato paste, and stock. Bring to a boil and simmer for 25 minutes.
  6. Roughly blend the soup with a stick blender. Season with salt, pepper, and lime juice.
  7. Slice the eggs lengthwise in half. Slice the olives lengthwise into three pieces each.
  8. Pour the soup into bowls. In each bowl, lay four egg halves in a row like a march. Place an olive slice on each egg as a shield.
  9. Garnish with coriander if desired.

Serving notes

  • Arrange the eggs and olives in a clear row as a cockroach column.
  • Serve in a wide bowl for best effect.
  • Offer lime wedges on the side for extra sourness.
