Codex Canapés

Mini bread booklets with Mexican toppings, a playful nod to the returning Aztec manuscript.

A festive row of small, open-faced booklets made from crisp bread and colorful Mexican toppings. Each booklet nods to the ancient manuscript, with symbols from avocado, tomato, and corn. Perfect for sharing and celebrating the codex’s return.

Ingredients

  • 1 baguette
  • 2 ripe avocados
  • 1 lime
  • 1 small red onion
  • 8 cherry tomatoes
  • 100 g corn (canned, drained)
  • 100 g feta cheese
  • 2 tbsp coriander, roughly chopped
  • 2 tbsp olive oil
  • salt and pepper to taste

Method

  1. Cut the baguette into 8 diagonal slices about 1 cm thick.
  2. Toast the bread slices until golden in a dry pan or toaster.
  3. Halve the avocados, remove the pits, and scoop the flesh into a bowl. Mash with lime juice, salt, and pepper into a coarse puree.
  4. Finely chop the red onion. Halve the cherry tomatoes.
  5. Spread each bread slice with a layer of avocado.
  6. On one half of each bread, add some red onion and tomatoes; on the other half, corn and crumbled feta.
  7. Gently fold each slice in half, like an open book, so the filling remains visible.
  8. Arrange the canapés in a straight row on a large platter, like a row of open books. Garnish with coriander and drizzle with olive oil.

Serving notes

  • Serve on a long platter for the book effect.
  • Add a small bowl of extra lime wedges.
