Comforting onion soup under a collapsed roof of baguette and cheese, as a tribute to the destroyed Parisian market.

A steaming French onion soup in a large dish, topped with broken baguette slices and melted cheese forming the collapsed metal market roof. The bread sinks at angles, evoking the caved-in structure. Comforting, warm, and a nod to the Paris disaster.

Ingredients

  • 6 large onions
  • 2 cloves garlic
  • 50 g butter
  • 1 tbsp olive oil
  • 1 liter beef stock
  • 150 ml dry white wine
  • 1 bay leaf
  • 8 slices baguette
  • 150 g grated Gruyère
  • Salt and pepper

Method

  1. Slice the onions into half rings and finely chop the garlic.
  2. Heat butter and oil in a large pan. Cook onions on low heat for 20 minutes until golden and soft.
  3. Add garlic and cook for 2 minutes.
  4. Deglaze with white wine, let simmer for 2 minutes.
  5. Add stock and bay leaf. Simmer gently for 20 minutes.
  6. Season with salt and pepper. Remove the bay leaf.
  7. Preheat the oven to 200°C (grill setting).
  8. Pour the soup into a large, shallow oven dish.
  9. Cover the top with baguette slices, some at angles and some broken, to resemble a collapsed roof.
  10. Generously sprinkle with Gruyère.
  11. Grill for 8 minutes until the bread is golden and the cheese is melted.

Serving notes

  • Serve straight from the dish so everyone can break off pieces of 'roof'.
  • Optionally garnish with fresh parsley for color.
