Collected Quota Salad

A stack of cucumber and tomato, just shy of full: crisp, minimalist, and clearly lacking.

A sober salad of thin cucumber and tomato slices, stacked to form a deposit bottle tower. The tower is just short of full: a few slices are missing, referencing the missed collection target.

Ingredients

  • 1 cucumber
  • 2 firm tomatoes
  • 1 small red onion
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • salt and pepper to taste
  • 4 small sprigs of dill (optional)

Method

  1. Wash the cucumber and tomatoes.
  2. Slice the cucumber into thin, even rounds.
  3. Slice the tomatoes into round slices about the same thickness as the cucumber.
  4. Peel the red onion and cut it into thin rings.
  5. Mix the olive oil, white wine vinegar, salt, and pepper in a small bowl.
  6. On each plate, build a tower of alternating cucumber and tomato slices, occasionally adding an onion ring. Stack the tower upright, but deliberately leave 2 slices off the top so the tower is not 'full'.
  7. Drizzle the dressing over and around the tower.
  8. Optionally garnish with a sprig of dill on top or beside the tower.

Serving notes

  • Serve on a white plate so the 'bottle' silhouette stands out.
  • Leave the missing slices clearly visible on the plate, separate from the tower.
