Container Inspection Tartare

Stacked tartare blocks as containers, sharp and sour, ready for inspection.

A sharp-sour starter of beef and beet tartare, arranged as a row of containers in profile. Each block refers to the seized drug containers: neatly stacked, square, with green pickle accents as 'seals'. Tension in the flavors, just like a police operation.

Ingredients

  • 200 g beef steak (sirloin or tenderloin)
  • 2 medium cooked red beets
  • 4 small pickles
  • 1 shallot
  • 2 tbsp capers
  • 2 tbsp wholegrain mustard
  • 2 tbsp mayonnaise
  • 2 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • salt and black pepper
  • 4 slices sturdy sourdough bread

Method

  1. Cut the meat and beets into small cubes of about 1x1 cm.
  2. Finely chop the shallot. Roughly chop the capers. Slice the pickles and dice a few into small cubes.
  3. Mix the meat with shallot, capers, mustard, Worcestershire sauce, olive oil, salt and pepper. Chill.
  4. Mix the beet cubes with a bit of vinegar, salt and pepper. Set aside.
  5. Toast the bread until crisp.
  6. On each plate, create a row of alternating meat and beet cubes, like stacked containers. Place a pickle slice on top here and there as a 'seal'.
  7. Drizzle some mayonnaise between the cubes for extra tension.
  8. Serve with a slice of toasted bread.

Serving notes

  • Make sure the cubes are stacked tightly, like a real container row.
  • Finish with a few capers as 'customs seals'.
  • Serve cold, immediately after plating.
