Salad as overheated cooler: cucumber and pepper form the newsworthy silhouette on your plate.

A sharp, tangy salad with long cucumber strips and bright red pepper slices, stacked to resemble an overheated cooling unit. Red onion and chili add tension, lemon gives acidity. The visual: a fridge gone wrong, straight from the supermarket news.

Ingredients

  • 2 large cucumbers
  • 2 red bell peppers
  • 1 red onion
  • 1 red chili pepper
  • 1 lemon
  • 100 g feta cheese
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • salt and black pepper

Method

  1. Slice the cucumbers lengthwise into wide strips using a cheese slicer.
  2. Cut the bell peppers into wide, straight strips.
  3. Slice the red onion into thin half rings.
  4. Slice the chili pepper into thin rings.
  5. Make a dressing with olive oil, white wine vinegar, honey, juice of half a lemon, salt, and pepper.
  6. Mix onion and chili with the dressing, let marinate for 10 minutes.
  7. Stand the cucumber strips upright on the plate as the walls of a cooling unit.
  8. Place the pepper strips between them as 'hot' elements.
  9. Crumble the feta on top for a 'melting' effect.
  10. Garnish with the marinated onion and chili. Drizzle extra lemon juice over.
  11. Serve immediately to keep the contrast between fresh and hot visible.

Serving notes

  • Stand the cucumber and pepper strips upright in a square, as the outline of a cooling unit.
  • Scatter the feta loosely on top, as if melting.
  • Serve on a cool white plate for extra contrast.
