Churros as microphones: a sweet ode to the Central American correspondent.

Festive Mexican churros shaped like microphones, with a chocolate ball as the head, a nod to the correspondent reporting from Central America. The microphone is the journalist's symbol, perfectly matching the theme of the series.

Ingredients

  • 250 ml water
  • 100 g unsalted butter
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 150 g flour
  • 2 eggs
  • sunflower oil for frying
  • 100 g dark chocolate
  • 50 ml heavy cream
  • 4 round chocolate truffles
  • sugar and cinnamon for dusting

Method

  1. Bring the water, butter, salt, and sugar to a boil in a saucepan.
  2. Add the flour all at once and stir vigorously until the dough pulls away from the pan.
  3. Let the dough cool slightly, then mix in the eggs one at a time.
  4. Put the dough into a piping bag with a star nozzle.
  5. Heat the oil to 180°C.
  6. Pipe 4 long churros (about 15 cm) directly into the oil and fry until golden. Drain on paper towels.
  7. Roll the churros in cinnamon sugar.
  8. Melt the dark chocolate with the cream into a smooth sauce.
  9. Stick a chocolate truffle onto one end of each churro to resemble a microphone head.
  10. Arrange the churro microphones on a platter, serve with the chocolate sauce.

Serving notes

  • Lay the churro microphones in a row on a large platter, like a press conference.
  • Serve with small bowls of chocolate sauce for dipping.
