Cracked Lemon Sheet

Ingredients

  • 4 sheets filo pastry
  • 75 g unsalted butter, melted
  • 4 eggs
  • 175 g fine caster sugar
  • 2 lemons (juice and zest)
  • 200 ml double cream
  • 1 tbsp cornstarch
  • 12 fresh raspberries

Method

  1. Preheat the oven to 180°C.
  2. Lightly grease a rectangular baking dish.
  3. Place 2 filo sheets in the dish, brush with melted butter, add the other 2 sheets, brush again.
  4. Bake the filo for 10 minutes until golden, then let cool.
  5. Whisk eggs, sugar, lemon zest and juice, and cornstarch together.
  6. Heat the cream in a pan, add the egg mixture and stir on low heat until thickened.
  7. Pour the lemon cream over the filo, chill for at least 2 hours to set.
  8. Carefully break the top filo so visible cracks appear.
  9. Place a raspberry on each crack as a warning light.

Serving notes

  • Serve in the rectangular dish so the cracks are clearly visible.
  • Ensure raspberries are placed exactly on the cracks.
