Crash Barrier Gratin

A warm gratin with zucchini as a crash barrier, for anyone in need of comfort.

A comforting potato gratin, topped with three long, diagonally placed grilled zucchini slices representing the crash barrier. The barrier curves gently, echoing the accident, and is clearly visible on the dish. A hearty, reassuring side for any main course.

Ingredients

  • 1 kg waxy potatoes
  • 2 zucchinis
  • 2 cloves garlic
  • 200 ml heavy cream
  • 100 ml milk
  • 100 g grated aged cheese
  • 2 tbsp olive oil
  • salt to taste
  • freshly ground pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and cut them into thin slices.
  3. Rub a baking dish with a halved clove of garlic and grease with olive oil.
  4. Mix the cream, milk, 1 pressed clove of garlic, salt and pepper.
  5. Layer half the potato slices in the dish, pour over half the cream mixture, sprinkle with half the cheese.
  6. Repeat with the remaining potatoes, cream, and cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Meanwhile, slice the zucchinis lengthwise into long, thin strips.
  9. Brush the strips with olive oil and grill briefly in a grill pan until marked.
  10. Remove the foil from the gratin, lay the grilled zucchini strips diagonally across the surface like a crash barrier (three, slightly curved), bake another 15 minutes until golden brown.
  11. Let rest for 5 minutes before serving.

Serving notes

  • Serve in the dish so the zucchini crash barrier is clearly visible.
  • Optionally garnish with extra freshly ground pepper over the zucchini.
