French onion soup with baguette barricades, sharp and sour as a tense curfew night.

A spicy French onion soup with sharp and sour notes, served with diagonally sliced baguette pieces across the bowl like a curfew barricade. The baguette silhouette echoes the street blockades in French cities during the curfew.

Ingredients

  • 4 large onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 liter beef stock
  • 150 ml dry white wine
  • 2 tbsp white wine vinegar
  • 1 tsp sugar
  • 1 bay leaf
  • 1 baguette
  • 100 g grated Gruyère
  • 1 tsp black pepper
  • Salt to taste

Method

  1. Slice the onions into half rings and finely chop the garlic.
  2. Heat olive oil and butter in a large pot, sweat the onions on low heat for 20 minutes until golden brown.
  3. Add garlic, cook for 1 minute.
  4. Add sugar, white wine, and vinegar, reduce for 2 minutes.
  5. Pour in the stock, add bay leaf, simmer gently for 20 minutes.
  6. Season with pepper and salt.
  7. Slice the baguette diagonally into 8 large pieces.
  8. Lightly toast the baguette slices, sprinkle with Gruyère, and grill for 5 minutes until golden.
  9. Ladle the soup into bowls.
  10. Lay two diagonally cut baguette pieces crosswise over each bowl, like a barricade.

Serving notes

  • Serve the soup hot, with the baguette pieces clearly forming a barrier.
  • Sprinkle extra pepper over the baguette for added tension.
