Diagram Double Play

A seemingly tidy diagram of beet and cheese, with a sharp sting inside.

A carpaccio of beetroot and mozzarella, laid in four overlapping rows like a heart monitor diagram. Impeccably presented, but with a sharp, spicy dressing. The ‘diagram’ on the plate nods to the hospital and hidden money flows.

Ingredients

  • 2 large raw beetroots
  • 2 balls mozzarella
  • 1 bag rucola (75 g)
  • 4 tbsp extra virgin olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tsp coarse mustard
  • 1 tsp honey
  • salt and black pepper
  • 1 red chili pepper
  • 1 tbsp toasted pine nuts

Method

  1. Peel the beetroots and cut into thin round slices.
  2. Slice the mozzarella into thin rounds.
  3. Mix olive oil, balsamic, mustard, honey, salt and pepper into a dressing.
  4. Slice the red chili into thin rings.
  5. On each plate, lay four rows: alternating beet and mozzarella, slightly overlapping, in a zigzag pattern like a heart monitor diagram.
  6. Divide the rucola between the rows.
  7. Drizzle the dressing over.
  8. Garnish with chili and pine nuts.

Serving notes

  • Serve on a white plate for the ‘diagram’ effect.
  • Lay the slices neatly in four sharp rows, not messy.
  • Let the dressing form a thin line following the ‘diagram’ shape.
