Dolly's Glittering Cowboy Hat Pie

An oven dish as cowboy hat with pink mash and chicken, a wink to Dolly's sparkling party hat.

A festive oven dish shaped like a cowboy hat, built from pink mashed potatoes and a rim of crispy chicken. The hat nods to Dolly's iconic look, complete with sparkling pink beet dots and a brim of corn. The dish radiates exuberance and country joy.

Ingredients

  • 800 g chicken thigh fillet
  • 1 kg floury potatoes
  • 1 small cooked red beet
  • 100 ml milk
  • 50 g butter
  • 2 tbsp mayonnaise
  • 1 can corn kernels (150 g drained)
  • 2 tbsp breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp paprika powder
  • salt and pepper
  • fresh chives (for garnish)

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and boil them for 20 minutes until tender.
  3. Cut the chicken thighs into strips, mix with olive oil, paprika, salt, and pepper.
  4. Fry the chicken strips in a pan until golden on all sides, about 8 minutes.
  5. Mash the potatoes with milk, butter, salt, and pepper into a puree.
  6. Puree the cooked beet and mix with half of the mash to make it pink.
  7. Line a baking tray with parchment. Shape the pink mash into a wide half-circle (the hat).
  8. Arrange the chicken strips around the bottom edge as the brim. Fill the brim with corn for extra color.
  9. Dot the top of the hat with mayonnaise and small beet cubes as glitter. Sprinkle with breadcrumbs for crunch.
  10. Bake for 10 minutes until the brim is crispy.
  11. Garnish with finely chopped chives for extra festivity.

Serving notes

  • Serve on a large platter so the cowboy hat shape remains visible.
  • Add a fresh salad in a separate bowl.
  • Sprinkle extra beet cubes just before serving for more glitter.
