Two eggs in double rows, like fingerprints in a suspenseful police file.

Two eggs in double rows, like fingerprints on a police file. Sharp, spicy dressing and a sneaky trail of green pepper add suspense. A nod to the identity swap and police check from the news.

Ingredients

  • 8 eggs
  • 100 g arugula
  • 1 cucumber
  • 2 green chilies
  • 1 small red onion
  • 3 tbsp rice vinegar
  • 2 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • salt to taste
  • black pepper to taste

Method

  1. Boil the eggs hard for 9 minutes, cool and peel them.
  2. Slice the cucumber into thin long ribbons with a peeler.
  3. Slice the green chilies diagonally and remove seeds for less heat.
  4. Cut the red onion into thin half rings.
  5. Mix rice vinegar, soy sauce, sesame oil, sugar, salt, and black pepper for a sharp dressing.
  6. On each plate, make a line of arugula and place two rows of two peeled eggs each, like double fingerprints.
  7. Lay the cucumber ribbons as a winding trail between the eggs.
  8. Scatter onion rings and green chili over the eggs and ribbons.
  9. Drizzle with the dressing just before serving.

Serving notes

  • Serve on a long plate for a dossier effect.
  • Keep the eggs clearly in double rows, like a fingerprint pattern.
  • Add extra green chili for more suspense.
