Double-Dealt Phone Gratin

Phones on your plate: neat outside, with a sharp bite inside.

A gratin of old and new potato layers, stacked into the silhouette of a smartphone, with a glossy cheese 'screen'. Neat and sleek outside, but the filling is a sharp mix of mustard, leek, and ham: scandal guaranteed.

Ingredients

  • 1.2 kg starchy potatoes
  • 600 g sweet potatoes
  • 2 leeks
  • 200 g cooked ham
  • 200 g grated aged cheese
  • 2 cloves garlic
  • 400 ml heavy cream
  • 2 tbsp coarse mustard
  • 1 tbsp butter
  • salt and pepper

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and slice them thinly (half a cm).
  3. Cut the leeks into rings, rinse clean. Roughly chop the ham.
  4. Sauté garlic in butter, add leek, and cook for 5 minutes until soft.
  5. Stir mustard into the cream, season with salt and pepper.
  6. Grease a baking dish. Layer: regular potato, leek-ham mixture, sweet potato, cheese. Repeat until all is used, ending with potato and cheese.
  7. Pour the cream mixture over the dish.
  8. Bake for 40-45 minutes until golden and cooked through.
  9. After baking, cut the gratin into four rectangular 'phones'. Stand them upright on the plate, cheese side up as the 'screen'.

Serving notes

  • Place a half slice of black olive on each 'phone' as a camera.
  • Scatter extra mustard seeds as 'notifications' on the plate.
