Golden brown potato sticks as a wing, a side dish celebrating victory with a nod to the skies.
Ingredients
- 800 g waxy potatoes
- 3 tbsp olive oil
- 1 tsp paprika powder
- 1 tsp sea salt
- 50 g arugula
- 50 g Parmesan cheese, shaved
- 1 tbsp honey
- 1 lemon (zest only)
- Black pepper to taste
Method
- Preheat the oven to 220°C and line a baking tray with parchment paper.
- Peel the potatoes and cut them into long, thick sticks (like chunky fries).
- Toss the potato sticks with olive oil, paprika powder, sea salt, and some black pepper.
- Spread the sticks in a single layer on the baking tray. Bake for 30-35 minutes until golden brown and crispy, turning halfway.
- Wash the arugula and arrange it in a wide strip down the center of a large serving platter: this is the plane’s body.
- Lay half the potato sticks diagonally in a long row over the arugula (the lower wing), stack the rest in a second, parallel row above (the upper wing of the biplane).
- Drizzle the top layer with honey and lemon zest, and generously sprinkle Parmesan cheese for a glossy finish.
Serving notes
- Serve on a large flat platter so the wing silhouette is clearly visible.
- Add a fresh yogurt dip on the side as a 'cloud'.
