Double Double Agent Parfait

Two-layer parfait as an open spy dossier, with sharp and sour flavors in conflict.

A dessert shaped like a dossier, with two layers: a sharp lemon (Australia) and a sour raspberry (Russia). Edible thin chocolate shards are the 'secret documents', a mint leaf represents the Ukrainian army. Tension between flavors, plated as an open file.

Ingredients

  • 250 ml whipping cream
  • 250 ml full-fat yogurt
  • 100 g sugar
  • 2 lemons (zest and juice)
  • 150 g raspberries (fresh or frozen)
  • 1 tbsp powdered sugar
  • 50 g dark chocolate
  • 8 mint leaves

Method

  1. Line a rectangular dish (20x15 cm) with baking paper.
  2. Whip the cream with 50 g sugar until stiff.
  3. Mix yogurt with lemon zest and juice of 1 lemon.
  4. Fold the whipped cream into the yogurt mixture.
  5. Pour half the mixture into the dish. Freeze for 30 min.
  6. Puree raspberries with 1 tbsp powdered sugar and juice of the second lemon.
  7. Mix raspberry puree into the remaining parfait base.
  8. Pour raspberry layer over the frozen lemon layer. Freeze for 4 hours.
  9. Melt chocolate au bain-marie. Spread thinly on baking paper. Let harden and break into shards ('documents').
  10. Cut the parfait into rectangular slices. Place a slice on each plate, layers visible.
  11. Stick 2-3 chocolate shards halfway into the parfait as 'documents'. Garnish with mint leaves as 'army'.

Serving notes

  • Serve on a white rectangular plate like an open dossier.
  • Place chocolate shards at an angle, as if sticking out of the file.
  • Add an extra mint leaf for a fresh espionage twist.
