Double Exit Parfait

Two parfaits as a duo, divided by an icy raspberry stripe: scandal in dessert form.

Two parfaits side by side as a duo, separated by a thin icy raspberry coulis layer. Neat and classic outside, with a sharp, tart sting inside. The plating refers to the two departing FBI top men and their frosty relationship.

Ingredients

  • 400 ml whipping cream
  • 4 egg yolks
  • 100 g sugar
  • 1 vanilla pod
  • 150 g raspberries (frozen or fresh)
  • 2 tbsp lemon juice
  • 2 tbsp powdered sugar
  • 8 ladyfingers
  • 1 tbsp vodka (optional)

Method

  1. Line a loaf tin with plastic wrap.
  2. Whip the cream until soft peaks form.
  3. Beat the egg yolks with sugar until pale yellow.
  4. Split the vanilla pod, scrape out the seeds, and add to the egg mixture.
  5. Fold the whipped cream into the egg mixture.
  6. Divide the parfait mixture into two equal portions.
  7. Pour one portion into the loaf tin, smooth, and freeze for 30 minutes.
  8. Puree the raspberries with lemon juice and powdered sugar into a coulis.
  9. Strain the coulis for a smooth sauce.
  10. Remove the tin from the freezer, pour a thin layer of coulis over the first parfait layer, and freeze for 15 minutes.
  11. Pour the second parfait portion on top, smooth, and freeze for at least 4 hours.
  12. Briefly soak the ladyfingers in vodka (or water) and place as 'feet' under the two parfait halves when serving.
  13. Turn out the parfait, cut into two equal rectangles, and place side by side on a plate with a stripe of raspberry coulis in between.

Serving notes

  • Serve the parfaits tightly together with the raspberry stripe as an icy border.
  • Garnish with an extra dollop of raspberry coulis for extra sharpness.
